Triple Chippers…made with l♥ve by the Cookie Mama

As I write this blog, I should be at the doctor with Ryan.  He had an appointment today to see an orthopaedist, but the appointment was cancelled.  We all got up early, Dan took the day off, and after we took Victoria to school, we began our trek to the doctor’s office.  I love love love living out here in the sticks, but the drawback is that we are MILES AND MILES from everything.  It takes me 20 minutes just to get to the grocery store, but I digress.  So as we were driving to the appointment, the doctor’s office called my cell phone to let us know that the specialist we were supposed to see had called in sick.  Therefore we would have to call the office after it opened to reschedule.  At this very moment I am “on hold” attempting to make another appointment.  The difficult part is that there is only one doctor in the office who specializes in pediatric knee issues, and he is only in on Wednesday mornings.  Actually, I think the most difficult part is that Ryan was pretty nervous for this appointment, so last night was pretty rough.  Now because the appointment was rescheduled, he has to endure that anticipatory anxiety all over again. I hope that the appointment goes well, and that we get some answers so Ryan can feel better.  P.S. the appointment is rescheduled for Monday and now instead of driving to Macomb, we get to drive all the way to Saint Clair Shores!

I actually baked this cookie last week, but was so busy that I couldn’t write the blog until now.  Last week was a normal week, but there were a few extra activities that chewed up the free time I usually have to write the blog.  Then over the weekend, I came down with this cold/flu thing that I just cannot shake.  I actually blame my getting sick on the fact that I have started working out…again.  Getting in shape was actually one of my New Year’s resolutions, and this is exactly what I feared would happen if I spoke about it. You see, I have this lovely pattern of getting sick every time (and I mean every eff’ing time…there goes the other resolution…to clean up my language ☺) I begin a work out program.  So this time I started really slow.  I started by playing “Dance Central” on the Xbox Kinect with the kids, and by doing “Zumba.”  I spaced the sessions days apart, I took extra probiotics to boost my immunity, AND I didn’t tell anyone what I was doing…in the ridiculous attempt to outsmart or hide from fate, or the germs, or something…I don’t know.  All that and it took exactly 2 dance/work out sessions for me to get sick. UGH!!! So now I cannot breathe well as my nose is totally plugged, and I cannot hear well (WHAT???)  as my ears are plugged too.  The “what” is because we have a habit of anytime someone in our house mentions their hearing, we all say “what??”  I know… we are so weird. ☺  So my attempt at working out will have to wait until I feel better.   There goes the resolution…it only took 14 days.  I do want credit though, as I did not willfully abandon the resolution, fate or germs or something else intervened. ☺

I am actually glad that I baked these last week, because with the way I feel currently, I am probably not baking this week.  I am happy to report that the cookies came out great. My family loved them…even Ryan.  Those of you who know Ryan, know how picky he is regarding food.  So the fact that Ryan liked the cookies, means they are good. ☺ They are like a chocolate chip cookie, but with a hint of peanut butter.  They are called triple chippers as they contain three different chips; semi sweet chocolate, white chocolate, and peanut butter. YUM.

Here is the recipe.

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups quick cooking oatmeal
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 6 oz. pkg of peanut butter chips
  • 6 oz. pkg white chocolate chips

Cream together the butter and sugars.  Add eggs and vanilla.  Using a food processor or blender, process the oatmeal until it turns into a powder.  In a separate bowl, mix the oatmeal, flour, baking powder, and baking soda.  Add the peanut butter chips, and both types of chocolate chips into the egg mixture.  Gradually add the flour mixture.  Drop by tablespoons, 2 inches apart, onto a greased baking sheet.  Bake at 375 degrees for 7-11 minutes.

    Hi! I’m Dr. Dipwad! I can only see your child (who needs my expertise) during a two hour window once every three months. As it happens, I cannot make the appointment that you used a vacation day on and took kids out of school for. I am sick (I decided to to to Aspen at the last minute).. We will reschedule your appointment for next July! If your little guy has any trouble between now and then, just tell him to “Walk it off, Champ!” By the way, make sure you are at least 15 minutes early for your rescheduled appointment (even though you will CLEARLY be waiting for an hour to see me) and if you can’t make it at the last minute (you know, like I just did to you) WE WILL STILL CHARGE YOU FOR THE APPOINTMENT! Crazy how that works, huh?

    PS (this is Dean now) Exercising AND cleaning up your language at the same time? Kinda reminds me of the Lloyd Bridges character in Airplane! “Looks like I picked a bad week to quit amphetamines!”

  2. To Dr. Dipwad…two words…get well! HAHAHAHAHAHA…hey at least I can “exercise” some control over 1 of my resolutions! The “old Chris” would have said something like “bite me” or “e’ff you”, man I think the “old Chris” was way more fun ; ) hehe

    To Dean I swear it’s the same 2 resolutions every single year, and the get in shape one usually does me in!! I feel like that character…guess I picked the wrong week to quit doing ANYTHING that might actually be good for me!!!!

    P.S. Vic says the cookies are coming in next month and she also says thanks for supporting Girl Scouts via the cookie sale and the magazine order ☺
